Ingredients
  

  • 1 Tbsp coconut oil
  • 1/2 Tbsp almond flour
  • 1 cup fish stock
  • 1/2 carrot, julienned
  • 1/2 leek, julienned
  • 1/4 zucchini, julienned
  • 4 raw shrimp, peeled
  • 4 scallops
  • 1 oz catfish
  • 2 Tbsp heavy cream
  • 1 Tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions
 

  • In a frying pan or wok, melt half the coconut oil and add almond flour. Stir without browning the flour for about 2 minutes. Add fish stock at intervals, stirring constantly. Boil gently for 5-10 minutes.
  • Add the remaining coconut oil and saute julienned carrots, leek and zucchini for about 15 minutes.
  • Add shrimps, scallops, fish and heavy cream. Simmer until fish and shellfish are tender, about 5 minutes.
  • Add parsley, salt, and pepper to taste.
