Creamy Fish Soup

Ingredients
- 1 Tbsp coconut oil
- 1/2 Tbsp almond flour
- 1 cup fish stock
- 1/2 carrot, julienned
- 1/2 leek, julienned
- 1/4 zucchini, julienned
- 4 raw shrimp, peeled
- 4 scallops
- 1 oz catfish
- 2 Tbsp heavy cream
- 1 Tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a frying pan or wok, melt half the coconut oil and add almond flour. Stir without browning the flour for about 2 minutes. Add fish stock at intervals, stirring constantly. Boil gently for 5-10 minutes.
- Add the remaining coconut oil and saute julienned carrots, leek and zucchini for about 15 minutes.
- Add shrimps, scallops, fish and heavy cream. Simmer until fish and shellfish are tender, about 5 minutes.
- Add parsley, salt, and pepper to taste.
