Ingredients
  

  • 8 shrimp, peeled and deveined
  • 2 cup mixed greens
  • 1/2 tsp Italian seasoning
  • 1 Tbsp extra-virgin olive oil
  • 1 oz cashews (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Put shrimp in a mixing bowl and rub in Italian seasoning. Mix well to coat shrimp thoroughly.
  • Add shrimp to the hot pan and cook about 2-3 minutes on each side, turning once midway, until shrimp is pink and cooked through. Remove the shrimp from the skillet.
  • Mix the cooked shrimp with the mixed greens. Sprinkle chopped cashews over top if desired. Serve.
