Ingredients
- 8 shrimp, peeled and deveined
- 2 cup mixed greens
- 1/2 tsp Italian seasoning
- 1 Tbsp extra-virgin olive oil
- 1 oz cashews (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Put shrimp in a mixing bowl and rub in Italian seasoning. Mix well to coat shrimp thoroughly.
- Add shrimp to the hot pan and cook about 2-3 minutes on each side, turning once midway, until shrimp is pink and cooked through. Remove the shrimp from the skillet.
- Mix the cooked shrimp with the mixed greens. Sprinkle chopped cashews over top if desired. Serve.
