Ingredients
  

  • 2 Tbsp extra-virgin olive oil
  • 1/2 carrot, chopped
  • 1/4 squash, cubed
  • 1/4 yellow onion, chopped
  • 1/2 turnip, cubed
  • 1 small or medium-sized trout
  • 6 cloves garlic
  • 1 Tbsp fresh dill
  • 1 Tbsp oyster sauce
  • 1 tsp ginger root, grated
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F/190°C.
  • Generously oil a baking sheet.
  • Lay chopped carrots, squash, onion, and turnip on the baking sheet in one layer and coat thoroughly with oil. Keep the center of the baking sheet open for the trout.
  • Season inside of the trout with salt and pepper. Peels and crush one garlic clove and stuff the trout with garlic and dill.
  • Using a sharp knife, make 3-4 deep slashes into each side of the trough for more uniform baking and brush outside surfaces with oyster sauce.
  • On the baking sheet with chopped vegetables, place the trout in the center (which had been left open). Add remaining unpeeled garlic cloves and grated ginger root. Season with salt and pepper.
  • Cook in the middle of the oven until the trout is cooked, about 25 minutes. Turn the trout over once halfway through. Check with a fork to see if the trout is cooked through.
  • Remove the skin and the bones of the trout and place the meat on a dinner plate. Spoon roasted vegetables near the trout and drizzle everything with cooking juice from the baking sheet and serve.
