Roasted Korean Duck

Ingredients
- 1/2 boneless duck breast
- 1 cup cauliflower rice, cooked
- Scallions, chopped
- Salt and pepper
- 1 Tbsp soy sauce, organic and preferably low sodium
- 1 Tbsp chili garlic sauce
- 1/2 Tbsp honey
- 1/2 Tbsp rice wine vinegar
Instructions
- Preheat the oven to 375°F/190°C.
- Heat an oven-safe frying pan on stove over high heat. Wipe the duck breast dry with paper towels, season with salt and pepper, and lay in the hot pan with skin side down. Cook until skin is nicely browned and fat has rendered.
- Flip the duck breast and sear the other side. Transfer the frying pan (with duck) to the oven and roast for 8-15 minutes, depending on how rare or well-cooked is wanted.
- While the duck is in the oven, make the sauce by mixing soy sauce, chili garlic sauce, honey, and rice wine vinegar in a small bowl. Set to side.
- Slice the scallions and set to side.
- Take the duck out of the oven and transfer to a chopping board and cover loosely with foil. Allow to rest for 10 minutes before slicing.
- Fill a bowl with cooked cauliflower rice and arrange slices of duck breast on top. Drizzle the sauce over the duck and sprinkle with sliced scallions.
