Spicy Tomato Shrimp

Ingredients
- 4 oz shrimp, peeled and deveined
- 1/4 Spanish or yellow onion, chopped
- 1/2 bell pepper, julienned
- 1 tsp extra-virgin olive oil
- 1 clove garlic, chopped
- 1 tomato, smashed
- 1 tsp capers
- 1/4 tsp red pepper flakes
- 1 Tbsp parsley, chopped
- Salt and pepper
Instructions
- Heat a frying pan to medium heat. Add olive oil and chopped onion. Cook and stir onion until translucent and slightly browned, about 1 minute.
- Add chopped garlic to the pan and cook for 30 seconds.
- Add smashed tomato, capers, bell pepper, red pepper flakes, and salt to pan. Stir and let sauce simmer for 7-10 minutes.
- Place each peeled and deveined shrimp into the sauce, one at a time. Push each shrimp down into the sauce. Cover and simmer for 6 minutes. Turn off the heat and add parsley.
- Stir and allow shrimp to sit in pan for an additional two minutes. Serve.
