Ingredients
  

  • 4 oz shrimp, peeled and deveined
  • 1/4 Spanish or yellow onion, chopped
  • 1/2 bell pepper, julienned
  • 1 tsp extra-virgin olive oil
  • 1 clove garlic, chopped
  • 1 tomato, smashed
  • 1 tsp capers
  • 1/4 tsp red pepper flakes
  • 1 Tbsp parsley, chopped
  • Salt and pepper

Instructions
 

  • Heat a frying pan to medium heat. Add olive oil and chopped onion. Cook and stir onion until translucent and slightly browned, about 1 minute.
  • Add chopped garlic to the pan and cook for 30 seconds.
  • Add smashed tomato, capers, bell pepper, red pepper flakes, and salt to pan. Stir and let sauce simmer for 7-10 minutes.
  • Place each peeled and deveined shrimp into the sauce, one at a time. Push each shrimp down into the sauce. Cover and simmer for 6 minutes. Turn off the heat and add parsley.
  • Stir and allow shrimp to sit in pan for an additional two minutes. Serve.
