Thin French Omelette

Ingredients
- 2 large eggs
- 1 Tbsp butter
- 1 oz feta cheese, chopped
- 1/2 cup fresh basil, chopped
- Olives
- Cherry tomatoes
- Feta cheese, small cubes
- Salt and pepper to taste
Instructions
- Preheat a nonstick pan on medium-low heat.
- In a medium bowl, beat eggs gently with a fork until thoroughly blended.
- Add butter to warm the pan and swirl lightly to coat the pan.
- Add egg mix to the pan, gently swirling egg evenly to cover entire bottom. Continue gently swirling until egg starts to cook evenly.
- Use a silicone spatula to gently pull a little of the edge of the solidifying omelet back toward the middle of the pan and then tip or “swirl” a bit of the remaining uncooked egg into the “open” area in the pan.
- Repeat pulling at the edge of the omelet, working around the pan in a circle to pull back and refill the now-"open" section until most of the uncooked egg has been spread around. When all uncooked egg is gone and the top surface of omelet is still glossy, remove skillet from the heat.
- Immediately add feta cheese and basil, then let omelet “rest” for one minute to finish cooking.
- Season with salt and pepper. Garnish with olives, cherry tomatoes, small feta cheese cubes, and basil leaves.
