Ingredients
- 1 tsp tahini, well-stirred
- 1/2 Tbsp lemon juice, freshly squeezed
- 1/2 clove of garlic, minced
- Ground cumin to taste
- 1 eggplant
- 1 Tbsp extra-virgin olive oil
- Pomegranate seeds (garnish)
- Salt and pepper to taste
Instructions
- Preheat a broiler and lightly oil a baking sheet.
- Cut the eggplant into 1/2-inch-thick slices. Brush oil on the both sides of the eggplant slices and transfer to the baking sheet.
- Broil the eggplant until golden and cooked through, flipping halfway through, for about 10 minutes.
- Combine tahini, lemon juice, garlic, and cumin in a food processor and pulse until combined. Add water as needed to create smooth sauce. Season to taste with salt and pepper.
- To serve, arrange the cooked eggplant slices on a dish and drizzle with tahini sauce. Sprinkle with pomegranate seeds.
