Ingredients
  

  • 1 tsp tahini, well-stirred
  • 1/2 Tbsp lemon juice, freshly squeezed
  • 1/2 clove of garlic, minced
  • Ground cumin to taste
  • 1 eggplant
  • 1 Tbsp extra-virgin olive oil
  • Pomegranate seeds (garnish)
  • Salt and pepper to taste

Instructions
 

  • Preheat a broiler and lightly oil a baking sheet.
  • Cut the eggplant into 1/2-inch-thick slices. Brush oil on the both sides of the eggplant slices and transfer to the baking sheet.
  • Broil the eggplant until golden and cooked through, flipping halfway through, for about 10 minutes.
  • Combine tahini, lemon juice, garlic, and cumin in a food processor and pulse until combined. Add water as needed to create smooth sauce. Season to taste with salt and pepper.
  • To serve, arrange the cooked eggplant slices on a dish and drizzle with tahini sauce. Sprinkle with pomegranate seeds.
