Learn how to make delicious and healthy Broiled Eggplant Plate by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.
- 1 tsp tahini, well-stirred
- 1/2 Tbsp lemon juice, freshly squeezed
- 1/2 clove of garlic, minced
- Ground cumin to taste
- 1 eggplant
- 1 Tbsp extra-virgin olive oil
- Pomegranate seeds (garnish)
- Salt and pepper to taste
Preheat a broiler and lightly oil a baking sheet.
Cut the eggplant into 1/2-inch-thick slices. Brush oil on the both sides of the eggplant slices and transfer to the baking sheet.
Broil the eggplant until golden and cooked through, flipping halfway through, for about 10 minutes.
Combine tahini, lemon juice, garlic, and cumin in a food processor and pulse until combined. Add water as needed to create smooth sauce. Season to taste with salt and pepper.
To serve, arrange the cooked eggplant slices on a dish and drizzle with tahini sauce. Sprinkle with pomegranate seeds.
