Ingredients
  

  • 1/3 chicken breast
  • 1 cup spinach leaves
  • 4 mushrooms, sliced
  • 1 tomato, sliced
  • 1/2 cucumber, chopped
  • 1/4 cup purple cabbage, chopped
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp 1 Tbsp extra-virgin olive oil
  • Salt and pepper

Instructions
 

  • Cut the chicken breast into small cubes.
  • Preheat the frying pan over medium heat. Add 1 tablespoon olive oil and chicken cubes. Cook chicken cubes stirring occasionally, about 7-10 minutes or to your liking.
  • Whisk balsamic vinegar, olive oil, salt, and pepper together in a small bowl.
  • On a dinner plate, arrange spinach leaves, sliced mushrooms, sliced tomato, chopped cucumber, and purple cabbage. Top with cooked chicken cubes.
  • Drizzle with olive oil dressing or with a favorite dressing.
