Ingredients
- 1/3 chicken breast
- 1 cup spinach leaves
- 4 mushrooms, sliced
- 1 tomato, sliced
- 1/2 cucumber, chopped
- 1/4 cup purple cabbage, chopped
- 1 Tbsp balsamic vinegar
- 1 Tbsp 1 Tbsp extra-virgin olive oil
- Salt and pepper
Instructions
- Cut the chicken breast into small cubes.
- Preheat the frying pan over medium heat. Add 1 tablespoon olive oil and chicken cubes. Cook chicken cubes stirring occasionally, about 7-10 minutes or to your liking.
- Whisk balsamic vinegar, olive oil, salt, and pepper together in a small bowl.
- On a dinner plate, arrange spinach leaves, sliced mushrooms, sliced tomato, chopped cucumber, and purple cabbage. Top with cooked chicken cubes.
- Drizzle with olive oil dressing or with a favorite dressing.
