Cut the chicken breast into small cubes.
Preheat the frying pan over medium heat. Add 1 tablespoon olive oil and chicken cubes. Cook chicken cubes stirring occasionally, about 7-10 minutes or to your liking.
Whisk balsamic vinegar, olive oil, salt, and pepper together in a small bowl.
On a dinner plate, arrange spinach leaves, sliced mushrooms, sliced tomato, chopped cucumber, and purple cabbage. Top with cooked chicken cubes.
Drizzle with olive oil dressing or with a favorite dressing.
