Ingredients
1/3cupquinoa, rinsed
1/4large pomegranate
1cupbaby spinach leaves
1cupgreen beans, trimmed and halved
2small radishes, trimmed and thinly sliced
Lemon juice
Extra-virgin olive oil
Salt and pepper
Instructions
Place quinoa and 1 cup of water in a small saucepan over medium heat. Cover and simmer until quinoa has absorbed all the water. Remove from heat and allow to cool.
Arrange spinach leaves leaves on the plate and top with green beans, radishes, and pomegranate seeds.
Season with salt and pepper. Drizzle with olive oil and lemon juice.
