Bring a large pot of salted water to a boil.
Wash the beets. Cut off the leaves, leaving one inch (leaving the stem on helps to keep too much red juice from “bleeding” out while boiling).
Place the beets in boiling water. Boil until tender when pierced with a fork, about 20-40 minutes. Smaller beets take about 20 minutes, medium beets about 30 minutes and large beets about 40+ minutes.
Toast walnuts on aluminum foil in a toaster oven, about 2-3 minutes.
To make dressing, whisk together olive oil, red wine vinegar, orange juice, honey, garlic, salt, and pepper in a small bowl.
Place mixed greens on a dinner plate. Cut the beets and orange into cubes and add to the mixed greens. Scatter the goat cheese and walnuts over the top and drizzle with dressing (or use your favorite).
