Ingredients
- 2 cups baby spinach leaves
- 1/2 cup fresh mushrooms, sliced
- 1/2 cup cherry tomatoes
- 1/2 orange, sliced
- 1/3 cup of red cabbage, chopped
- 2 oz of tofu, sliced
- 1 Tbsp extra-virgin olive oil
- 1 Tbsp balsamic vinegar
- Salt and pepper
Instructions
- Slice fresh mushrooms, orange, and tofu. Set aside.
- Cut cherry tomatoes in half and chop red cabbage. Set aside.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Set aside.
- Plate spinach leaves, sliced fresh mushrooms, halved cherry tomatoes, chopped red cabbage, sliced tofu, and orange slices.
- Drizzle with olive oil mixture or use a favorite dressing.
