Slice fresh mushrooms, orange, and tofu. Set aside.
Cut cherry tomatoes in half and chop red cabbage. Set aside.
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Set aside.
Plate spinach leaves, sliced fresh mushrooms, halved cherry tomatoes, chopped red cabbage, sliced tofu, and orange slices.
Drizzle with olive oil mixture or use a favorite dressing.
