Learn how to make delicious and healthy Summer Mushroom Salad by following an easy step by step recipe. Serves 1 person. Multiply by number of servings needed.

Ingredients
  

  • 2 cups baby spinach leaves
  • 1/2 cup fresh mushrooms, sliced
  • 1/2 cup cherry tomatoes
  • 1/2 orange, sliced
  • 1/3 cup of red cabbage, chopped
  • 2 oz of tofu, sliced
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp balsamic vinegar
  • Salt and pepper

Instructions
 

  • Slice fresh mushrooms, orange, and tofu. Set aside.
  • Cut cherry tomatoes in half and chop red cabbage. Set aside.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Set aside.
  • Plate spinach leaves, sliced fresh mushrooms, halved cherry tomatoes, chopped red cabbage, sliced tofu, and orange slices.
  • Drizzle with olive oil mixture or use a favorite dressing.
